🍍 Pineapple Coconut Dream Cake
A soft, ultra-moist tropical cake loaded with pineapple and coconut flavor — perfect for summer gatherings or when you want something sunshine-inspired.
🌴 Ingredients
For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

2 tsp baking powder

3 large eggs

1 cup crushed pineapple (with juice)

½ cup vegetable oil

½ cup sour cream

1 tsp vanilla extract

1 cup sweetened shredded coconut
For the Coconut Cream Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

3–4 cups powdered sugar

½ cup coconut cream (or thick coconut milk)

1 tsp vanilla extract

1 cup toasted coconut (for topping)
🥥 Instructions
1️⃣ Prepare the Cake

Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan.

In a large bowl, whisk flour, baking powder, baking soda, and salt.

In another bowl, beat eggs and sugar until light and fluffy.

Mix in oil, sour cream, pineapple (with juice), and vanilla.

Gradually fold dry ingredients into wet mixture.

Stir in shredded coconut.

Pour into prepared pan and bake 30–35 minutes, or until a toothpick comes out clean.

Let cool completely.
2️⃣ Make the Frosting

Beat cream cheese and butter until smooth.

Add powdered sugar gradually.

Mix in coconut cream and vanilla.

Frost cooled cake.

Sprinkle toasted coconut on top.
