For the salmon

4 salmon fillets (skin on or off)

Salt & black pepper, to taste

1 tsp paprika

2 tbsp olive oil

2 tbsp butter
-
4 cloves garlic, minced
For the creamy sauce

8 oz (225g) mushrooms, sliced (cremini or white button)

3 cups fresh spinach
-
1 cup heavy cream
-
½ cup grated Parmesan cheese
-
½ cup chicken broth (or white wine)

1 tsp Italian seasoning
-
1 tbsp lemon juice
-
Optional: red pepper flakes

1️⃣ Season & Sear the Salmon

Pat salmon dry. Season with salt, pepper, and paprika.

Heat olive oil in a large skillet over medium-high heat.

Sear salmon 4–5 minutes per side until golden and cooked through.

Remove from pan and set aside.
2️⃣ Make the Garlic Butter Base

In the same skillet, reduce heat to medium.

Add butter and minced garlic. Sauté 30 seconds until fragrant.
3️⃣ Cook Mushrooms & Spinach

Add mushrooms and cook 4–5 minutes until browned.

Stir in spinach and cook until wilted.
4️⃣ Create the Creamy Sauce

Pour in chicken broth (or wine) and simmer 2 minutes.

Add heavy cream, Parmesan, Italian seasoning, and lemon juice.
