Chocolate Crust

2 cups chocolate cookie crumbs (like Oreo, filling removed)

5 tbsp melted butter

1 tbsp sugar (optional)
Chocolate Cheesecake Filling

24 oz (680g) cream cheese, softened

1 cup sugar

3 large eggs

1 tsp vanilla extract
-
1 cup melted semi-sweet chocolate (cooled slightly)

½ cup sour cream
-
¼ cup heavy cream
Strawberry Topping

2 cups fresh strawberries, sliced

¼ cup sugar
-
1 tbsp lemon juice
-
1 tsp cornstarch + 1 tbsp water (optional, for thicker sauce)

1️⃣ Prepare the Crust

Preheat oven to 325°F (163°C).

Mix cookie crumbs and melted butter.

Press firmly into the bottom of a 9-inch springform pan.

Bake for 8–10 minutes. Let cool.
2️⃣ Make the Filling

Beat cream cheese until smooth.

Add sugar and mix until combined.

Add eggs one at a time, mixing gently.

Mix in vanilla, melted chocolate, sour cream, and heavy cream.

Pour over cooled crust.
3️⃣ Bake
